Cutting Out the Eggs

I recently got an email asking if I knew any good ways to cut eggs out of recipes. This woman’s husband is allergic to eggs and egg substitute products, but she still wanted to do some baking. I’d never really thought about cutting out eggs, so I did some research and found an amazing website with lots of suggestions and instructions for replacing eggs. http://www.theppk.com/veganbaking.html
I’m pretty excited about these suggestions and I think I’m going to give them a try with a Banana Biscotti recipe that I have. I’ll be sure to post the recipe if it turns out well.

I have used extra bananas in banana bread when I discovered (too late) that I had no eggs. I couldn’t tell the difference… Good luck!
