Eating Out at Home: Quizno’s Inspired BBQ Chicken Sandwiches
For me, summer weather means trying to make creative meals without using too much heat. Today I tried my idea of a Quizno’s type toasted sub, but with a BBQ summer time feel. This is more of an idea than a recipe, but also super easy and I hope you’ll try it.
BBQ Chicken Sub*
- Chicken breasts, cut into bite size pieces
- red onion, sliced
- pineapple chunks, sliced
- BBQ sauce
- sandwich buns (my grocery store has a great bakery that makes these hoggie buns in many varieties and are only 3 for a dollar)
- shredded cheddar (*leave off cheese for a lactose-free alternative)
Saute the cut chicken with the onions until cooked completely through. Remove from heat. Add the sliced pineapple chunks to chicken and onion. Drizzle everything with BBQ sauce and stir until evenly coated. Split buns in half on a baking tray and load them with the meat mixture on one side. Smear the opposite side with BBQ sauce. Sprinkle both sides with cheese. Turn your oven on broil and cook the sandwiches just long enough for the cheese to melt and for the bread to get slightly crisp. Serve with other great summer time sides – salad, fresh fruit, corn on the cob, etc.
*The quantities of the ingredients are up to you and your preferences. For me and JayI used about a half a pound of chicken, a quarter of an onion, and 1/3 c. pineapple, but I think I’ll use more onion and pineapple when I make it again.
