Mom’s Classic – Hamburger Pie

When Jay and I were dating, I didn’t cook for him very often. I didn’t want to be one of those girls that try and lure guys into relationships with warm cookies and homemade bread. This hamburger pie recipe was the first thing that I made for him – it’s not fancy, but for a meat & potatoes kind of guy like Jay it really hit the spot. In fact, his roommate tried it to and asked me to teach him to make it.
Hamburger Pie (mom’s version*)
1 lb lean hamburger meat
1/2 med onion, finely chopped
1/2 tsp. black pepper
1/2 tsp. black pepper
1 can green beans, drained
1 can condensed tomato soup
3-4 c. mashed potatoes
1 c. shredded cheddar cheese
Preheat oven to 350 degrees. Brown hamburger meat with onion & pepper, drain. Mix meat and onion mixture with soup and green beans in a 2.5 quart baking dish. Top with mashed potatoes and then cheese. Bake at 350 for about a half hour or until edges are bubbly and cheese is melted.
* When I make this, I add an extra can of green beans (I like the french cut for this recipe) and about an extra 1/4 can of tomato soup. This can be wasteful, so I’ll often save the leftover soup and make it as lunch the next day.
